First one was taken at Blue Mountains, Katoomba, New South Wales Australia, 3 Sisters Scenic view.

 

2nd one was taken at a lake at the windfarm, near Orange town, about 2 hours drive from Blue Mountains.

 

Taken with my humble Nikon Coolpix 3200 :D

If you wanna take something like that with one shot, you need a fisheye lens, but still cannot capture such a wide angle.

 

An easier way is to take several shots across the horizon, then stitch them together using software. Its not easy, cos gotta get the horizon straight, and gotta make sure each picture overlaps the previous one, or else cannot stitch together seamlessly.
