i just cook some curry chicken recently with my wife...

Low fat chicken curry"

 

1 packet instant chicken curry mix

small pot of coconut juice to boil chicken drumsticks

cup of coconut cream/milk

lowfat fresh milk

plenty of potatoes skin peeled

Onions, shallots & so on.

 

Boil the chicken and cubed potatoes in coconut juice till soft.

 

Stirfry the curry mix with onions & shallots till paste is dry. Slowly pour in the coconut cream/milk followed up by low fat skimmed milk. Bring to boil and then simmer plus add in the boiled chicken and potatoes till ready to eat.

 

Curries are always the most flavourful when eaten the next day. So consider using your rice cooker to simmer and keep for the next day!

One of the few easiest to make dishes, especially when you got children and old people in the house.

 

Just buy a few grams of minced lean meat. Throw in spoons of Oyster sauce & chinese wine mix it well. Put in fridge.

 

And when you need them. Stuff them onto shitake mushroom caps and put into the steamer.

 

Or roll into balls to make meat balls soup.

I just bought $50 worth of spices to stalk up so I can have sg food in Europe till next yr! Sigh..

sorry sorry, I typed a bit wrongly. Should be coconut juice. not Milk. The drinking coconut water kind. Save the water to boil the chicken and potatoe to give it the coconut flavour.

 

Then when all spices is added with milk and coconut cream and boiling, then add in the chicken chunks/drumsticks and potatos.

I think you can. But you either just drop in spoonfuls of the mince meat to the pan/deep fryer or shape it, but flour it a bit to give it shape. Can add in more fresh chopped crispy onions/radishes or chinese water chestnuts bits to give it some crunch.

 

Can also stir fry it loose, then add on top of steamed eggs or mixed into sambal chilli and stir fry to serve with tofu or kangkong.

Also can wrap in wanton skins, or simply layer it with pasta and tomato sauces for lasagna.
