Guess which word had this meaning.

1. Any code or set of principles containing different provisions for one group of people than for another, esp. an unwritten code of sexual behavior permitting men more freedom than women.

2. A set of principles permitting greater opportunity or liberty to one than to another, especially the granting of greater sexual freedom to men than to women.

3. A set of principles establishing different provisions for one group than another; also, specifically, allowing men more sexual freedom than women.

Story behind the gung ho lady who started out Estivo Gelateria

Cool venture

If you can’t imagine a corporate lawyer selling gelato, then meet Kelly Sng

By Janice Wong, 15 June 2004

Streats

THE saying “Never trust a thin chef” obviously does not apply to Ms Kelly Sng.

In fact the svelte 29-year-old single-handedly whips up refreshingly yummy tubs of gelato, or Italian ice-cream, at her cafe Estivo Gelateria every morning at her 1,500 sq ft outlet along Greenwood Avenue, off Bukit Timah Road.

Opened in April, the cafe – with its colourful child-friendly interior and an alfresco area – is a hit with families of the moneyed residential enclave. And customers can number up to 500 a day during weekends, putting the company in the black.

Ms Sng serves the customers herself with the help of three part-time waitresses.

But life has not always been so physically taxing.

She used to be a corporate lawyer.

Ms Sng was with law firm Wong Tan and Molly Lim LLC for five years.

Speaking of her time with the firm, she said: “I would have left earlier if not for my fun colleagues. I didn’t like the work – the research, the long meetings, the difficult clients and the pressure.

“I never aspired to be a lawyer. Studying law was the outcome of eliminating what I didn’t want to study. It took me 15 months to decide to resign because I didn’t have a firm plan of what to do.”

Then, a month after she resigned, two girlfriends prompted her to think of starting a gelateria.

The National University of Singapore graduate said: “We love eating gelato because it is as rich as regular ice-cream, yet does not contain as much fat because it is milk-based, not cream-based. Plus, unlike the ice-cream parlour market, the gelateria market is not saturated.”

After deciding to pursue the idea, Ms Sng, a self-proclaimed perfectionist, was fixated on quality. She did not want to import the gelato because frozen gelato tends to be rock hard.

So, she sourced for gelato-making machines from the Internet to make fresh ones and flew to Dallas to attend a one-week course taught by an Italian.

Her start-up capital was $200,000, which came from her two girlfriends, her family and her savings.

The bachelorette counts the support of her parents as her impetus.

Her father is a retired stockbroker, while her mother, Mrs Sng Ngoi May, is executive vice-president of corporate services and coporate relations at Singapore Press Holdings. She has an elder sister who is a doctor.

Said Ms Sng of her parents: “I felt I let them down when I left the law firm. But they never asked why I gave up a good job to do this. There was no condemnation. Instead they told me they are behind me.

“(Now) I am working longer hours but I am happier. I feel less burdened now, especially when I see my customers’ faces light up after eating the gelato.”

The gelatos cost $2.80 for a small cup and $3.90 for a large cup. And Ms Sng’s menu includes more than 30 flavours. However, only about half are available each day.

She is now looking to supplying her gelatos to restaurants and setting up a second outlet.

Look out for her own concoctions made from her favourite beverages such as Milo, Horlicks and coffee bursting with cashew.

A typical day for Ms Sng starts at 7.30am and ends at 10pm. And when she can find the time, she works out at the gymnasium of Singapore Island Country Club.

Asked about the misconception that gelato is easy to make, she said: “Actually a batch takes six hours and involves a lot of manual labour like hand mixing.”
