Usually come in viscoscity grade of SAE 5, 10, 15, 20, 25 but different manufacturer termed thme differently.

Generally SAE 5 and 10 are for small bikes and 15 to 25 are for bigger bikes. But the best outcome would be to mix them in known ratio of SAE grades and volume to achieve the desired damping effect.

no need. but if the seals are old, it's better to change them together while doing an oil change.

not true. SAE 5, aka 5 wt oils are more towards rear suspension. same goes for 2.5 wt oil. for front fork, most bikes are using 10-15 wt. it would also depends on the rider's weight and preference as to whether he/she wants a slow/fast damping on the front fork.

20-25 wt oil would have a very slow damping due to the thick viscosity, which is very very seldom used on bikes.
