I read on the GT85 can that it is not harmful to paint. Has anyone used GT85 to leave a silicon coating over the entire bike? I find that it's much easier to clean gunk and other undesirable stuff off a silicon coating as compared to the clear coat.

Any experiences or comments?

Yes, it can be used to clean brake dust but do not spray onto the brake pad and rotor. If I'm not wrong, it will leave a teflon coating not silicon coating. Anyway for black matt surface, I would recommend Maxima SC1. Once you tried it, you'll love it.
