yes you can change, or for some they just change the setting mainjet, airjet etc.

after changing there will be obviously more power/pickup for the bike. better response. and dun forget more fuel consumtion. there are carbs like mikuni,keihin.. these are the normal carbs ppl change to. there are also other carbs available.. do luk ard or ask u mech about it.
