Can anybody enlighten me about COE, renewable and non-renewable etc. My bike is a 07 bike, COE ending 2017. Can I renew the COE if I want to use the bike long term? I am a bit confused as to what are the rules and stuff.

Yes, can renew.

Unless if the bike was renewed 5 years before, then COE will be unrenewable

Yep, you are correct. You can renew as long as you like if it's a 10 yrs renew.
